Potato and Egg Curry Recipe (Aloo Anday)

Ingredients

  • 3 medium potatoes, peeled and cubed
  • 3 eggs, boiled and cut into halves
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped or blended
  • 2 tablespoons cooking oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves for garnish

Cooking Method

Heat oil in a deep pan over medium heat. Add cumin seeds and allow them to crackle for a few seconds until aromatic. Add chopped onions and cook until they become light golden brown, stirring occasionally.

Add ginger-garlic paste and cook for about 30 seconds until the raw smell disappears. Add chopped or blended tomatoes and cook until the mixture thickens and oil starts separating from the sides.

Now add salt, red chili powder, turmeric powder, and coriander powder. Mix well and then add the potato cubes. Stir for 2 to 3 minutes so the potatoes absorb the spices properly.

Add water, cover the pan, and cook on low to medium heat until the potatoes become soft. Stir occasionally and add more water if required.

Once the potatoes are fully cooked, gently add the boiled egg halves. Let the curry simmer for 3 to 4 minutes so the eggs absorb the flavors of the gravy.

Taste and adjust seasoning if needed. Turn off the heat and garnish with fresh coriander leaves before serving.

Serving Suggestions

Serve Potato and Egg Curry hot with roti, paratha, naan, or plain rice. It also tastes great with a side of salad or yogurt.
